[Dbix-class] DBIx::Class::Schema::Versioned patch

I wanted to extend DBIx::Class::Schema::Versioned, but a lot of the
code wasn't modularized.  I moved some things around so now you can
create a subclass and overload methods for more flexibility.

Take a look at the attached diff, and if you like it please apply it.
