I personally prefer Snapz Pro on Mac OS X but vnc2swf (http:// 
www.unixuser.org/~euske/vnc2swf/) seems very simple too.
You just use the vnc server built into Gnome and record to swf using  
this nifty tool, examples can be seen at http://nat.org/demos/
