[Catalyst] Explanation of Catalyst::(Helper)::Model::DBIC::Schema

Alright, I got it working now by creating all classes by myself not using the
helper for Model::DBIC::Schema. The docs definitely need to clear things up a
little bit more there.

I'm off digging deeper into the schema-based approach now :)
